    Oats are pretty awesome. I fell in love with them last summer while we had some friends over. René, one of these guys who was an early waker, told us how he was looking for a breakfast that was consistant enough to last until lunch time, but also quick to make. So he was all into porridge, which is usually made out of quick oats with hot water or milk and it’s super damn filling. I tried it and liked it very much, but the most interesting for me was to clean the dishes after, because it made me realize how extremely sticky oats can be when mixed with a hot liquid. It’s insane, very tricky to clean, but it made me think that I could take advantage of this “stickiness”. I’ve started to experiment making cookies with anything I could find. Chocolate pieces, with or without milk, vegan, fruits and I even tried to make veggie patties. And that’s a hell of a good one, sticking together like a real burger should!

    My brother has a few apple trees in his backyard, so besides tons of apple juice he didn’t know what to do with those apples and gave us quite a few. I thought it was a good ingredient to incorporate in my oat experiments. These cookies became super moist, almost like an apple crumble. It’s an awesome healthy snack to take on the go or when we’re in a rush, and the recipe is pretty easy, too.

    Here’s what you need for 6 medium sized cookies:

    • 2 medium sized apples
      Peeled and cut into small cubes.  Enough to fill 2 cups
    • 1 cup of quick oats & 1 cup of rolled oats
      I like to do a half/half mix because quick oats tend to become too pasty.
      The rolled oats bring a bit more texture in the mix.
    • 1 tsp cinnamon
    • 1 tsp vanilla extract
    • 3 tbsp agave sirup
    • 1 cup of hot water
      You can also use soy/rice/almond milk
      Heat it up a little for the oats to really stick together.
    • to top: a little bit of coconut sugar

    Simply mix and stir everything except the water, together in a large bowl. Add the hot water, mix it well together and let it rest for 5 minutes. Using a spoon, shape them into small patties on a backing sheet. Sprinkle some coconut sugar on top of each patty and take them into the oven for 25 minutes at 180° degrees Celsius. Let them cool down for 15 minutes before taking them out of the baking sheet so that the oats stick well together.

    That’s it for the recipe! And that’s what I like the most about it, it’s super easy and it takes me about 15 minutes to make them. Perfectly portable to eat on the go and not over indulge with sugar 🙂
